INGREDIENTS:
- 1 eggplant
- 2-3 eggs
- bread crumbs
- oil
- marinara sauce
- mozzarella cheese
- grated Parmesan cheese
DIRECTIONS:- Peel eggplant and slice into thin slices.

2. Heat oil in pan on med/high heat. (entire pan should maintain a shallow pool of oil)
3. Beat eggs in a small bowl. Dip eggplant in eggs and then bread crumbs.

4. Fry eggplant until golden, flipping once halfway through.

5. Coat bottom of an 8x8 pan with sauce. Place a single layer of eggplant on top of sauce. Cover with sauce and sprinkle with Parmesan and mozzarella. Repeat this process for three layers off eggplant, ending with cheese on top.

6. Cover with foil and bake at 375 for 25 minutes. Remove foil and bake an additional 5 minutes.
* This is so simple to make. I think it is easier than lasagna and it tastes dang good!

I remember you sending me home with leftovers once. It was my first encounter with eggplant and it was surprisingly good.
