Bubbly Love Potion

My kiddos gulped this up fast! It was a fun drink for our Valentines dinner.


INGREDIENTS:
  • 1 (12-ounce) can pink lemonade concentrate
  • 4 cups raspberry sherbet
  • Can of Sprite
DIRECTIONS: Mix the lemonade with recommended water. Combine 4 cups of sherbet with 4 cups of lemonade in the blender. Spoon into individual glasses and gently stir in the sprite.

Smartie Cookies


My sugar cookie & icing recipe is HERE. Perfect sugar cookie. Just be sure to chill the dough for at least an hour, so that it is easy to work with. I usually roll the dough into a log and wrap it in saran wrap to chill overnight in the fridge.

I made these cookies for each of my twins preschool classes for all the smarties in their class. My boys loved putting the smarties on and counting as they went to be sure they all had 6 smarties each. The smarties actually taste really good on this cookie. Makes for cute "sprinkles" too.

Reese's copycat

I love anything Reese's, so I had to try THIS recipe. I love that it's homemade. Way cheaper than buying a bag of Reese's and it tastes very similar to the real thing! You can place it in a mini cupcake liner or roll the dough into an egg shape for Easter. I rolled out the dough and used an ity bity heart cookie cutter for Valentines Day.

You will definitely want to HALF the recipe because this is a BIG batch.

INGREDIENTS:
  • 4 c. Powdered sugar
  • 1 1/2 c. Peanut Butter
  • 1/4 c. Butter
  • 2-3 T. Milk
  • 3 c. Semi Sweet Chocolate Chips
  • 1 T. Shortening

DIRECTIONS:

  1. Combine powdered sugar, peanut butter and butter. Add Milk 1 T. at a time until it becomes a nice workable dough. It will be just like play dough and easy to work with.
  2. Form dough. Set on parchment lined cookie sheet and freeze for 1 hour.
  3. Melt chocolate and shortening in microwave. Stirring every 30 seconds until smooth.
  4. Dip dough in melted chocolate to coat and set on parchment paper.

* I used a fork to dip the dough in chocolate. Then I would tap the fork on the cup to get the excess chocolate off before setting it on the parchment paper.

* I did HALF this recipe and it made a whole cookie sheet... 52 hearts! They are about the same size as a small Reese's cup.

*TIP: You can measure peanut butter in a measuring cup of water. This way it won't stick all over the measuring cup. Easy clean up!

Peanut Butter Cookies + Reese's or Kiss


So soft and peanutbutterlicious.
My hubs favorite cookie is a good Ol' Classic crisscross peanut butter cookie. So, I made up a batch today for our 6th anniversary. Woot-woot!!

INGREDIENTS:
  • 1 3/4 c. Flour
  • 1/2 t. Salt
  • 1 t. Baking Soda
  • 1/2 c. Butter
  • 1/2 c. Sugar
  • 1/2. packed Brown Sugar
  • 1/2 c. Peanut Butter
  • 1 egg, beaten
  • 1 t. Vanilla
  • 2 T. Milk

DIRECTIONS:

  1. Combine flour, salt and baking soda. Set aside.
  2. Cream butter, sugars and peanut butter.
  3. Beat in the egg, vanilla and milk.
  4. Chill dough for 1 hour in fridge. I just let it chill over night.
  5. Roll into ball. Make the crisscross mark on top and bake @ 375* for 6-7 minutes. Then cool on rack.
OR you can mix it up a bit....

Just roll up a small ball of chilled dough. Bake and then immediately press FROZEN Reese's cup into the peanut butter cookie. Chill in the fridge if the chocolate melts.

I looooove Reese's, so this is my kind of cookie! YUM.

This one is a cute little treat. A good one for the up coming holiday! Just roll a small ball of chilled dough into sugar. Bake and then top with a Hershey's Chocolate Kiss. Chill in fridge.

Oreo Truffles


Oooooreo O Oreo! What's in the middle....

INGREDIENTS:
  • 1 (16 ounce) package OREO Cookies
  • 1 (8 ounce) package Cream Cheese, softened
  • 2 (8 ounce) packages Semi-Sweet Baking Chocolate, melted

DIRECTIONS:

  1. Crush 9 cookies and save for top of truffle.
  2. Crush remaining 36 cookies into fine crumbs.
  3. Mix cookie crumbs into cream cheese.
  4. Roll into 1 inch balls and chill in the fridge to firm.
  5. Carefully roll into melted chocolate with 2 spoons.
  6. Place on wax paper and decorate with cookie crumbs, sprinkles or drizzle with melted white chocolate.
  7. Chill in fridge for 1 hour.

They do take a little time to make, but it is worth it. I'm telling you, they are so dang good!

Sugar Cookies & Icing

This sugar cookie recipe is great!! Tasty and they hold their shape really well. The key is to chill the dough for at least an hour and to keep it chilled while cutting out shapes and baking. I like to make the dough the night before baking to chill it in the fridge over night.

INGREDIENTS:
  • 3/4 c. Butter
  • 1 c. Sugar
  • 2 eggs
  • 1/2 t. Vanilla
  • 2 1/2 c. Flour
  • 1 t. Baking Powder
  • 1/2 t. Salt

DIRECTIONS:

  1. Cream butter & sugar.
  2. Beat in eggs and vanilla.
  3. Combine flour, baking powder & salt. Stir into cream mixture until combined.
  4. Chill in fridge.
  5. Roll out and cut shapes. While keeping remaining dough in fridge.
  6. Bake @ 400 for 6 minutes on ungreased cookie sheet.

*Watch cookies carefully while baking! They only take around 5-6 minutes until done.

Now for the icing.....

I got the recipe from Allrecipes website. I like it because you can't really mess it up. You just add more powder sugar or milk to get the consistency you like. It's perfect for a sugar cookie and so pretty!! I just use a spoon to pour it on and smooth it over. Pour some in a zip lock bag. Cut a small hole to drizzle and decorate your cookies!

INGREDIENTS:
  • 1 cup confectioners' sugar
  • 2 teaspoons milk
  • 2 teaspoons light corn syrup
  • 1/4 teaspoon almond extract
  • assorted food coloring

I made these once to hand out to neighbors and friends for Valentines Day. I put them on a cute plate with Oreo truffles and Pretzel Kisses!

Pretzel Hugs & Kisses


WHAT YOU WILL NEED:

  • Snyder Waffle Pretzels
  • Hershey Kisses (any variety- Milk chocolate, Hugs, Caramel or Dark Chocolate)
  • M&M's (milk chocolate, dark, peanut, peanut butter- any kind!)
  • Parchment paper
DIRECTIONS:
  1. Preheat oven to 170*
  2. Cover baking sheet with parchment paper and set pretzels in a single layer on parchment paper.
  3. Unwrap Hershey kisses and set on top of pretzel.
  4. Place in oven to heat the chocolate kiss until it is slightly softened and shiny. (about 5 minutes)
  5. When you take it out of the oven, immediately top with an M&M. Pressing it down softly.
  6. Cool in fridge for 10 minutes or until the chocolate hardens.
* These are so simple to make. They are really cute in a clear treat bag tied with ribbon and they can be made for any occasion!

Sugar Cookies


INGREDIENTS:

  • 1 cup Butter (the real stuff)
  • 1 1/4 cup Powder Sugar
  • 1 egg
  • 1 tsp. Vanilla
  • 2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. cream of tartar
  • 1/8 tsp. salt

DIRECTIONS:
  1. Cream butter & pwd. sugar in mixer.
  2. Beat in the egg & vanilla
  3. Combine in separate bowl; flour, baking soda, cream tartar & salt.
  4. Blend the flour mixture with the sugar mixture.
  5. Set dough in fridge for 1 hour to chill.
  6. Roll out dough & cut with cookie cutters.
  7. Set on an UNgreased baking sheet and bake for about 9 minutes. Cool and frost!

* These cookies are so super easy to make and they make cute treats to give to family, friends, neighbors or Visiting Teaching!
