Beef stew - Pot pie

Oh wait... maybe this is my favorite soup! I love soup. This one is my own creation, but you really can't go wrong with stew! M M Mmmm!

INGREDIENTS:
  • 2 lbs beef stew meat, trimmed and cubed
  • 1/4 c. flour
  • 1/2 t. salt
  • 1/2 t. pepper
  • 1 onion, chopped
  • 2 c. beef broth
  • 1 T. Worcestershire sauce
  • 2 Garlic cloves
  • 2-3 potatoes
  • 3-4 carrots
  • 3 celery stalks
  • Mushroom (opt.)

Seasonings: paprika(1 t.), bay leaves, thyme, parsley, and salt & pepper. Whatever you like. Also, 1 pkt Brown gravy OR beef stew seasoning.

DIRECTIONS:

  1. Toss meat, flour and salt & pepper in a gallon zip bag.
  2. Brown coated meat and onion in a large pan with HOT oil. Then dump meat into crock pot.
  3. Pour beef broth into pan to get all the bits of goodness off the pan.
  4. Pour broth into crock pot along with all the other ingredient and cook on low for 6-8 hours.

It's delicious on it's own with rolls or even more so delicious in individual pot pies.....

You can find my recipe HERE. It goes perfectly with the stew. I made these for our New Years dinner. Definitely a new tradition! We had fun making them together and we all loved the recipe. The kids liked having their OWN pie to eat out of.

*Remember to push the dough into the sides of the dish good and poke lots of holes or the sides will fall when baked.

Making individual pies can be a little daunting. You may also make fun shapes out of the dough instead. Super easy. Just cut out the shapes and set on a greased cookie sheet. Brush with egg wash (opt.) and bake until golden and done. I think it takes around 15 minutes to bake, give or take.

Pot Roast in gravy

This gravy is amazing!!! There is cream of Mushroom soup in it, but I'm telling you it doesn't taste a thing like mushrooms. I love this recipe because it is so simple, it's packed with flavor and the meat turns out tender and SO delish. Look no further, THE perfect pot roast!!
You have gotta try it!

INGREDIENTS:
  • 2-4 lb Beef Roast
  • 1 1/4 c. Beef broth
  • 1 Pkt. Lipton Onion soup mix
  • 2 cans Cream Mushroom soup
  • Salt & Pepper
  • Mashed Potatoes

DIRECTIONS:

  1. Brown the roast on both sides in a pan with hot oil. (optional)
  2. Put Roast in the Crock Pot and pour beef broth over top. Then the dry onion mix. Spoon on the Mushroom soup. Sprinkle with salt and pepper.
  3. Cook on low for 6-8 hours.
  4. Remove fatty pieces and shred meat. I just shred it in the pot. It should pretty much just fall apart!
  5. Cook another hour and it is ready to serve over mashed potatoes!

*Instead of served over mashed potatoes, you may add diced potatoes, carrots and celery for the last 4 hours of cook time. yum. :)

Pot Roast

This is just a dinner idea. I don't make pot roast often because we always have TONS of leftovers, but when I make it- it is OH so good!

INGREDIENTS:
  • Beef Roast
  • 1 pkt. Dry Onion Soup mix
  • 2 or 3 beef bouillon cubes
  • about 3 cups water (I just fill the crock pot up until it almost covers the roast)
  • 4 potatoes
  • carrots
  • celery

DIRECTIONS:
  1. Place Roast in crock pot with water, onion mix and bouillon. Cook on low for 6 hours or on high for 4 hours.
  2. Cut up Vegetables.
  3. Take out 2 cups of juices from crock pot and reserve for gravy.
  4. Put vegetables in crock pot over the roast. Sprinkle with salt and pepper. Cook on low for an additional 2-3 hours or until vegetables are tender.
  5. Take out vegetables and shred meat.
  6. Make gravy by heating the roast juices on stove. Thicken gravy by adding cornstarch/water mixture. (use maybe 2-3 Tbsp. cornstarch and little water)

Roast Beef Sandwiches

INGREDIENTS:

  • pot Roast (beef)
  • 1 pkt. Dry Onion soup mix
  • 2-3 beef bullion cubes
  • 1 cup water
  • French Bread
  • Au Jus Gravy Mix (optional)

DIRECTIONS:
  1. Place roast in crock pot. Combine water, bullion cubes and onion soup mix. Pour over roast. (you want the water to come to the top of the roast in the crock pot)
  2. Cook on low for 6 hours.
  3. Shred the meat and cook for another hour.
  4. Spread french bread LIGHTLY with butter. Broil in oven for 6 minutes or until toasted. (it's good to toast the bread, so that the meat doesn't make it soggy)
* You can make up the Gravy mix to dip it in. It really tastes good, but we like it without the gravy too.
