Streusel-Topped Blueberry Muffins

 Recipe from Our Best Bites. Makes 12 muffins.

INGREDIENTS:
  • 1 3/4 c. Flour
  • 2 3/4 t. Baking powder
  • 3/4 t. salt
  • 1/2 c. sugar
  • 2 t. lemon peel
  • 1 egg
  • 3/4 c. buttermilk
  • 1/3 c. canola oil
  • 1 c. fresh OR frozen blueberries *coat in 1 T. flour & 1 T. sugar
TOPPING:
  • 1/4 c. sugar
  • 2 1/2 T. flour
  • 1/2 t. cinnamon
  • 1 1/2 T. butter  
  • *combine dry ingredients and cut in the butter to make crumb.*

DIRECTIONS:
  1. Combine top 5 ingredients into a bowl. 
  2. In a separate bowl mix the egg, buttermilk and oil. 
  3. Stir into the flour mixture until moistened. 
  4. Fold in the coated blueberries.
  5. Pour into a greased muffin pan, filling 2/3 full.
  6. Sprinkle on topping and bake at 400* for 16-18 minutes. 

Blueberry Oatmeal Breakfast Supershake

I really like this shake. My kids do too! I have made it many times. You really don't need to measure. Like most shakes just add ingredients to your liking and desired consistency. 

INGREDIENTS:
  • 1/2-1 c. ice
  • 1 banana
  • 1/2-1 c. blueberries
  • 2 T. peanut butter
  • 1-2 T. honey
  • 1/3 c. quick oats
  • 1 c. milk
  • 2 scoops berry ice cream or yogurt (optional)
DIRECTIONS: Blend until smooth. Original recipe has 2 bananas, but I just use 1 frozen banana. It's fine without the yogurt or ice cream also.

NO BAKE Granola Bars

Healthy granola bar. Only way to eat them is frozen!


INGREDIENTS:
  • 2 overripe bananas, mashed
  • 3 T. Cocoa Powder
  • 2 T. honey
  • 1 T. Maple Syrup
  • 2 T. Peanut Butter
  • 1 1/2 c. Oats
  • 3/4 c. Rice Crispy cereal
  • 3 T. Craisens
  • 3T. Semi-sweet Chocolate Chips
  • Coconut for top

DIRECTIONS:

  1. Mix the mashed bananas, Cocoa Powder, honey, syrup and peanut butter.
  2. Add in the oats and cereal.
  3. Fold in craisens and chocolate chips.
  4. Press into muffin tin with liners. Top with coconut and freeze for 1 hour.

So I would like to say that we love these, but I threw most of them away. I would delete this one if I hadn't already posted it, but maybe some of you might like it. I don't think I will make this one again.

Pumpkin Breakfast Casserole

Oh man this breakfast is seriously SO good!!! It's sorta like french toast, but better!


INGREDIENTS:
  • 10 slices of Bread, cubed
  • 2 c. pumpkin puree
  • 1 c. brown sugar
  • 2 t. cinnamon
  • 1/2 t. gr. ginger
  • 1/2 t. gr. nutmeg
  • 1/4 t. salt
  • 1 t. vanilla
  • 6 eggs, beaten
  • 1 c. milk
  • 1 (5 oz) can evaporated milk
  • 1/2 c. chopped pecans for top (optional)

DIRECTIONS:

  1. Put the cut up bread into 9x13 dish.
  2. Combine all other ingredients and pour over bread.
  3. Cover with saran wrap and put in fridge over night.
  4. Next morning Bake @ 350 for 45 minutes.
  5. Serve warm with butter, syrup and powdered sugar over top!

OPTIONAL: Before baking- I mix 1/4 c. Brown sugar, cinnamon and a few Tablespoons of butter. Sprinkle it on top. You can grate the butter to combine the crumb easily.

*I make half the recipe. Using 4 THICK slices of homemade bread and put it in a 11x7 pan, but an 9x9 will work fine! I also use fresh pumpkin puree that I have stashed in the freezer, but if you don't have pumpkin on hand I'm sure applesauce would be fantastic as well!

Basic Bread + cinnamon rolls!



I have never EVER been good at making bread. Until my cousin Jamie gave me this fail proof recipe. Bread turns out great every time. YAY! If I can make good bread, anyone can!! I promise it is easy peasy. :)

The best thing about this bread is you can make all sorts of goodies with it. My favorite thing to make is the ROLLS. These are THE BEST rolls... well besides Grandma's, but no one can make Grandma's rolls JUST like Grandma does so these will do!

Pizza Poppers
Garlic sticks
Cinnamon sticks
Cinnamon rolls

INGREDIENTS:
  • 10 1/2 c. Flour (Bread flour is best!)
  • 1/2 c. Sugar
  • 1 T. Salt
  • 3 T. Yeast
  • 4 c. Hot tap water
  • 1/2 c. Oil
DIRECTIONS:
  1. Mix all dry ingredients.
  2. Add in water and oil. Mix for 1 minute, then check consistency. Add more flour if too wet, add more water if too dry. (Should be a tad sticky, but not sticking to your fingers.)
  3. Knead for 8 minutes. I leave my KitchenAid mixer with the dough hook, on 2 speed.
  4. Spray counter with oil spray. Plop dough onto counter and form ball. Cut ball into 4 sections and cover with towel to rise.
*This recipe will make 4 loaves of bread OR 4 dozen rolls OR 4 pizza crusts. I always do half the recipe because that is all that will fit in my KitchenAid mixer.

Bread: I let the dough rise once on the counter. Then I form the loaf and let it rise again in the greased loaf pan. Then I pour a few tablespoons of melted margarine over the top.... well, because that's what Grandma does. :) I usually bake on a lower rack in the oven because it rises quite a bit over the top. Bake at 375* for around 25 minutes. You can flip the loaf out of the pan to check if the bottom and sides are done.
Seriously, the best. I use this recipe every time for rolls. So easy and GOOD!
Rolls: Cover dough with towel and rise once on the counter for about 10-20 minutes. Form about 2 inch balls, cover and rise again in a 9x13 dish for around a 1/2 hour or until doubled in size. Spoon melted butter over tops. Bake at 375* for 15-18 minutes, until golden. Take a stick of butter and rub some of it over the tops of warm rolls. Cover with towel.
Cinnamon Rolls: Roll dough to flat rectangle shape. Spread softened margarine over dough. Evenly, sprinkle with sugar and LOADS of brown sugar. Then sprinkle desired amount of cinnamon. Stretch and roll tightly. Then pinch the seam well. Slice 2" rolls. Place 12 rolls into greased 9x13 dish. They will almost be touching. Pat over the top of them to make them an even height. Cover with towel and rise.
For a quick rise time. Place in 170* oven for 20-30 minutes, until about double in size.
Bake 375* for 15-18 minutes.
Mmmm.... looks and smells delicious!
Glaze: 2 c. Powder sugar, 1/2 t. Vanilla and add about 1/4 c. Milk for desired consistency. Add more powdered sugar if you like a thicker glaze. I give the rolls 5-10 minutes to cool and then I pour the glaze on top!

Banana Crumb Muffin

The crumb on top is the bomb and the muffin is so moist and keeps well for days.

INGREDIENTS:
  • 1 1/2 c. flour
  • 1 t. baking soda
  • 1 t. baking powder
  • 1/2 t. salt
  • 3/4 c. sugar
  • 1 egg, beaten
  • 1/3 c. butter (melted)
  • 3 bananas (mashed)

CRUMB TOPPING:

  • 1/3 c. brown sugar
  • 2 T. flour
  • 1/4 t. cinnamon
  • 1 T. butter (softened)

DIRECTIONS:

  1. Combine flour, baking soda, baking powder & salt. Set aside.
  2. Beat the sugar, egg and butter.
  3. Mix cream mixture & flour mixture with mashed bananas until moist.
  4. Spoon into greased muffin tin.
  5. For the crumb mixture; combine brown sugar, flour and heaping 1/4 t. cinnamon. :) Cut in the butter. Sprinkle on top of muffin batter.
  6. Bake @ 375 for 18-20 minutes.


Makes 12 scrumptious banana muffins. :)

German Pancakes

This is my cousin Lacey's recipe. It is my favorite breakfast!!!

(not my picture, but this is what it looks like!
It will rise above the top of the dish, but it won't spill out- so no worries!)


INGREDIENTS:
  • 1/4 cup Butter
  • 6 eggs
  • 1 cup flour
  • 1 cup milk
  • pinch of salt
DIRECTIONS:
  1. Preheat oven to 450. Place butter in a 9x13 dish and put in the oven to melt.
  2. Mix in blender for 5 minutes- eggs, milk, flour and salt.
  3. Pour into the dish with the melted butter. Bake for 25 minutes or until golden brown.
  4. Cut into squares and top with your favorite topping. (Apple Cider syrup, jelly, pwd. sugar, fruit, etc.)
* When I was looking for a picture online. I saw German pancakes baked in a muffin tin. I thought it was a good idea. It would make them cute little individual servings.

Apple Cider Syrup

INGREDIENTS:

  • 1 cup Apple Juice
  • 1 Tbsp. Lemon Juice
  • 1/2 cup Sugar
  • 1/4 tsp. Cinnamon
  • 1/4 tsp. ground Cloves
  • 1/4 tsp. Nutmeg
  • 1 Tbsp. Corn Starch
DIRECTIONS:
  1. Mix everything in a sauce pan.
  2. Bring to a boil until the mixture becomes clear, stirring constantly.
* I didn't have plain apple juice, so I used my favorite juice (apple juice punch blend) http://torreyskitchen.blogspot.com/2008/10/apple-punch-blend-juice.html and it was so good! Tasted the same, but I could taste the little hint of fruitiness!
