Sugar Cookies & Icing

This sugar cookie recipe is great!! Tasty and they hold their shape really well. The key is to chill the dough for at least an hour and to keep it chilled while cutting out shapes and baking. I like to make the dough the night before baking to chill it in the fridge over night.

INGREDIENTS:
  • 3/4 c. Butter
  • 1 c. Sugar
  • 2 eggs
  • 1/2 t. Vanilla
  • 2 1/2 c. Flour
  • 1 t. Baking Powder
  • 1/2 t. Salt

DIRECTIONS:

  1. Cream butter & sugar.
  2. Beat in eggs and vanilla.
  3. Combine flour, baking powder & salt. Stir into cream mixture until combined.
  4. Chill in fridge.
  5. Roll out and cut shapes. While keeping remaining dough in fridge.
  6. Bake @ 400 for 6 minutes on ungreased cookie sheet.

*Watch cookies carefully while baking! They only take around 5-6 minutes until done.

Now for the icing.....

I got the recipe from Allrecipes website. I like it because you can't really mess it up. You just add more powder sugar or milk to get the consistency you like. It's perfect for a sugar cookie and so pretty!! I just use a spoon to pour it on and smooth it over. Pour some in a zip lock bag. Cut a small hole to drizzle and decorate your cookies!

INGREDIENTS:
  • 1 cup confectioners' sugar
  • 2 teaspoons milk
  • 2 teaspoons light corn syrup
  • 1/4 teaspoon almond extract
  • assorted food coloring

I made these once to hand out to neighbors and friends for Valentines Day. I put them on a cute plate with Oreo truffles and Pretzel Kisses!


Special Buttercream Frosting

The twins 4th birthday cake! The shark is made of rice crispy treat and the teeth is candy corn!

I love a whip cream frosting. It's light and not as sweet as the regular frosting.


INGREDIENTS:
  • 3/4 c. Shortening
  • 1/4 c. Butter
  • 4 c. Powder Sugar
  • 1/4 t. Salt
  • 1 t. Vanilla
  • 3 oz. Heavy Cream

DIRECTIONS:

  1. Cream shortening, butter and powder sugar.
  2. Stir in the salt and vanilla.
  3. Blend in the heavy cream until moist and whip on high until fluffy.

Perfect!! I add close to a whole cup of heavy cream instead of the 3 oz. We like it extra fluffy and light.

Santa Fe Chicken


My little boy.... not a tomato or avocado lover! I don't know what's wrong with him. ;)
This is a keeper I got from my sister in law, Alisha.

INGREDIENTS:
  • 5-6 Chicken breasts
  • 2 (15 oz) cans corn
  • 1 (15 oz) can black beans, rinsed
  • 1 cup Salsa
  • 1 cup Cheddar Cheese, shredded
  • Tortillas

Combine corn, beans and 1/2 cup Salsa to bottom of crockpot. Place chicken on top and pour remaining salsa over top. Cook on high for 4 hours. Serve with cheese and a tortilla. They are great made simple or you can add in all your favorite taco toppings and roll it up!

Momma Jones' Ham Sandwich

This pic doesn't look that great.... I toasted the bread with butter on it. It doesn't need the butter! Just go ahead and toast it without!

INGREDIENTS:
  • Sandwich roll(toasted)
  • Ham lunch meat (cut into strips)
  • Onion
  • Green Pepper
  • Pepper(season)
  • Mozzarella cheese or provolone
  • mustard

DIRECTIONS:

Heat ham in a sprayed pan for a few minutes on med-high heat. Add sliced onion and bell pepper. Heat until slightly tender. Season with Pepper. Spoon onto toasted roll. Top with cheese and melt in broiler for a couple minutes. Slather on some mustard and that's it! So easy!! One of our favorites that my MIL makes. :)

Cake Pop!


I got this tasty little treat from a church activity... over a year ago. I had never had one before, so I looked it up and found the recipe at
Bakerella.
So many cute ideas on her site. I actually made these ice cream cake pops for my little girl's 1st birthday. Except I used an Oreo truffle recipe (my favorite... I mean seriously, who doesn't LOVE oreos?!!) and a flat bottom waffer cone, so they stood on their own. Way cute and everyone at the party loved them! I have a picture somewhere....

but just look at this cake pop. Oh yumminess.

Steak Sandwich

*Hey all! I'm sorry it's been awhile. I've been going through old pics and finding pics of food! So, I thought I would share them with you. This is one that my hubs and I had seen on some cooking show. I recreated it and it was a hit!

INGREDIENTS:

  • Sandwich Rolls(toasted)
  • Steak cut in strips (season to liking)
  • Mozzerella Cheese
  • Hash Browns
  • A1 steak sauce (we added this, but optional)

Mom's Cabbage Soup


INGREDIENTS:

  • Cabbage
  • Carrots
  • Celery
  • Onion
  • Can diced tomato
  • Can tomato sauce
  • Chicken stock
  • Salt, Pepper & Basil

DIRECTIONS:

Chop it all up and throw it in a pot. Bring to boil and then cover with lid and simmer.


*I hope I'm not leaving any ingredients out. I am adding this one from memory. It is simple, but so delicious. This soup reminds me of home. My mom would make a huge pot of it and I would eat it all week. :)
