Chicken Cacciatori


INGREDIENTS:

  • 1/2 Onion (diced)
  • 3 Chicken Breasts (cubed)
  • 1 tsp. Italian Seasoning
  • 1 can Diced Tomatoes
  • 1 small can Tomato Sauce
  • 1 cup Sour Cream
  • Shredded Mozzarella Cheese
  • Rice

DIRECTIONS:
  1. Spray pan with oil and heat the diced onions until tender.
  2. Add the cubed Chicken and seasoning and cook until done.
  3. Pour in the tomato cans and heat through. Then stir in the Sour Cream until well blended.
  4. Serve over rice and top with cheese.

* Ethan ate this last night and he hates anything with tomatoes in it!! It tasted good! It has been awhile since I have made chicken Cacciatori and I had forgotten how FAST and EASY this meal is! I think I used to make it different every time I made it before, but I like this way. I used to add Italian tomatoes, but it was too seasoned. You will need to add more tomato sauce if you add more chicken.
