- 1/2 Onion (diced)
- 3 Chicken Breasts (cubed)
- 1 tsp. Italian Seasoning
- 1 can Diced Tomatoes
- 1 small can Tomato Sauce
- 1 cup Sour Cream
- Shredded Mozzarella Cheese
- Rice
DIRECTIONS:
- Spray pan with oil and heat the diced onions until tender.
- Add the cubed Chicken and seasoning and cook until done.
- Pour in the tomato cans and heat through. Then stir in the Sour Cream until well blended.
- Serve over rice and top with cheese.
* Ethan ate this last night and he hates anything with tomatoes in it!! It tasted good! It has been awhile since I have made chicken Cacciatori and I had forgotten how FAST and EASY this meal is! I think I used to make it different every time I made it before, but I like this way. I used to add Italian tomatoes, but it was too seasoned. You will need to add more tomato sauce if you add more chicken.
